On behalf of the Organising Committee, it is my great pleasure to nvite you to the 1st International Conference on Polyphenols and Health at the Conference Hall-Opera in Vichy, France on November 18st-21st, 2003.

Polyphenols are major antioxidants commonly found in fruit, vegetables, cereals, legume seeds, chocolate and beverages such as tea, coffee or wine. They possess antiproliferative and enzyme modulating activities. Scientific studies from different disciplines strongly suggest a role in the prevention of degenerative diseases such as cancers, cardiovascular diseases, osteoporosis or neurodegenerative diseases.

The pace of polyphenol research has increased rapidly over the past five years. However, clinical and epidemiological evidence of their protective effects is still limited and the optimal levels of intake have not yet been established. Furthermore, some questions about their safety have also been raised. This is especially important in view of the growing number of new food products specifically designed as sources of polyphenols.

This conference will focus on the most recent polyphenol-related research and will involve many of the key contributors to the field. It will be a focus for controversial and fruitful discussions between actors of different background. The conference will offer an overview of our present knowledge on the mechanisms of action, bioavailability and associations with disease and health. It will stimulate scientific debate between participants from both academic institutions and private companies and will offer opportunities for further research and collaborations. Such discussions, based on sound scientific evidence, may be embryonic in the formulation of dietary recommendations and new food products of higher health value.

The Conference will take place at the Conference Hall-Opera of Vichy, France.
Vichy is an internationally known spa town located 248 miles to the south
of Paris, 128 miles from Lyon and 34 miles from the regional capital,
Clermont Ferrand. It is close to the National Park of the volcanoes of
Auvergne.
